Green Eggs No Ham

Ingredients
  

  • 2 tbsp olive oil
  • 2 cloves garlic pressed
  • 1/2 cup red onion diced
  • 2 cups raw spinach
  • 2 cherry peppers
  • 2 eggs
  • 1 tbsp vinegar

Instructions
 

  • Pour olive oil into a medium skillet and heat on low
  • Peel garlic cloves, press or smash, and add to olive oil
  • Allow garlic to infuse flavor into olive oil for about five minutes
  • Turn up heat to medium and add diced red onion
  • Cook, stirring occasionally, until onion sizzles and becomes limp
  • Add baby spinach and stir for two to three minutes until it begins to wilt
  • Create two nests for eggs and break one egg into each
  • While eggs cook until whites become opaque, slice cherry peppers into thin strips and arrange over spinach
  • For over easy eggs, put skillet under broiler for three minutes to ensure egg whites become firm. For hard-cooked eggs, place in a pre-heated 350 degree oven for five minutes
  • Drizzle a tablespoon or two of vinegar from the pickled cherry pepper over greens
  • Loosen from skillet with a spatula and slide onto plate
