Ten Minute Green Veggie Meal

Ingredients
  

  • 2 tbsp olive oil
  • 1/2 medium red onion
  • 2 cloves garlic
  • 1 ounce salami
  • 2 cups kale raw
  • 1 tbsp blue cheese
  • salt and pepper to taste

Instructions
 

  • Cut onion into thin slices, peel and dice garlic clove, and slice salami thinly
  • Saute onion, garlic, and salami in olive oil over medium heat until onion is tender
  • Add two cups kale or other dark leafy green and stir until wilted, about one minute
  • Season to taste with salt and pepper
  • Remove from heat to serving plate or bowl. Sprinkle with blue cheese
