Ten Minute Green Veggie Meal

A quick stir-fry of spinach or kale makes a tasty meal

- 2 tbsp olive oil
- 1/2 medium red onion
- 2 cloves garlic
- 1 ounce salami
- 2 cups kale raw
- 1 tbsp blue cheese
- salt and pepper to taste
Cut onion into thin slices, peel and dice garlic clove, and slice salami thinly
Saute onion, garlic, and salami in olive oil over medium heat until onion is tender
Add two cups kale or other dark leafy green and stir until wilted, about one minute
Season to taste with salt and pepper
Remove from heat to serving plate or bowl. Sprinkle with blue cheese
